The drink that goes best with kebabs, flatbreads and dumplings: ready in five minutes from yogurt, water and salt. Copy the ingredients to your room, tick off what's missing at the shop, and keep the steps open on your phone.

*4 glasses · 5 min*

**In short:** Frothy ayran takes 400 g plain yogurt, 400 ml cold water and half a teaspoon of salt, which makes about 4 glasses in about 5 minutes. Whisk the cold ingredients on high for 30–60 seconds or shake them in a jar, then pour into an iced glass from a height. The secret to the froth is cold ingredients and whisking right before serving.

## Ingredients

- Plain yogurt — 400 g, plain
- Cold water — 400 ml
- Salt — ½ tsp
- Ice — for serving
- Soda water — 100 ml, optional
- Dried mint — 1 pinch, optional
- Fresh mint — a few leaves, to garnish
- Strained yogurt — optional, for a thicker ayran

## Method

1. Put the yogurt and salt in a large bowl or the blender jug. Keep the yogurt and water straight-from-the-fridge cold; ayran froths better when it's cold.
2. Add half of the cold water and whisk or blend until the yogurt has fully dissolved.
3. Add the remaining water and whisk on high for about 30–60 seconds, until a dense froth forms on top. If you don't have a blender, you can shake it vigorously in a jar with a lid.
4. Taste and adjust: add a pinch more salt if needed; for a thicker drink replace some of the water with strained yogurt, for a lighter one add a little more water or soda.
5. Whisk or shake once more right before serving; ayran loses its froth as it sits.
6. Pour into glasses with ice from a height so the top foams up; sprinkle with dried mint and garnish with a fresh mint leaf if you like.

## Frequently asked questions

### Why won't my ayran froth?

Usually the ingredients aren't cold enough or it hasn't been whisked enough. Use yogurt and water straight from the fridge, whisk on high for at least 30 seconds and whisk once more right before serving.

### What is the right yogurt to water ratio for ayran?

A common ratio is 1 part yogurt to 1 part water; 400 g of yogurt to 400 ml of water. For a thicker drink use less water or strained yogurt, for a lighter one use more water. Add the salt little by little and taste as you go.

### How long does homemade ayran keep in the fridge?

In a closed bottle it stays good for up to 1–2 days in the fridge. As it sits, the water and yogurt separate and the froth fades; shake or whisk it again before drinking. Don't drink it if the smell or taste has changed.

### Can I change the list?

### Do I need an account?

### How long is the list kept?

As long as you use it. A list is only deleted after a month without any activity; even opening the room resets the clock.

### Can I install it on my phone?

Yes. With the room open, tap "Save Room" to add it to your home screen and open it with one tap.
