# Tavuk sote (Turkish chicken sauté with vegetables) — ingredients and method

A weeknight saver: chicken breast seared over high heat, then simmered with peppers, mushrooms and tomato in its own juices. Copy the ingredients to your room, tick off what's missing, and keep the steps on your phone.

*Serves 4 · 30 min*

**In short:** Tavuk sote for 4 takes 600 g chicken breast, 1 onion, 2 green and 1 red pepper, 200 g mushrooms, 2 tomatoes, 2 garlic cloves, tomato paste and thyme, all cooked in one pan in about 30 minutes. Sear the chicken over high heat in batches, sauté the vegetables, then combine everything and simmer for 8–10 minutes until the sauce thickens. Serve with rice or bread.

## Ingredients

- Chicken breast — 600 g
- Onion — 1 large
- Green peppers — 2
- Red pepper — 1
- Mushrooms — 200 g
- Tomatoes — 2
- Garlic — 2 cloves
- Tomato paste — 1 tbsp
- Vegetable oil — 3 tbsp
- Dried thyme — 1 tsp
- Salt — 1 tsp
- Black pepper — ½ tsp

## Method

1. Cut the chicken into 2–3 cm (1-inch) cubes and toss with salt and pepper. Slice the onion into half-moons, the peppers into chunks and the mushrooms into slices; dice the tomatoes and crush the garlic.
2. Heat a wide pan over high heat until very hot, add half the oil, and sear the chicken in batches, without crowding, for 3–4 minutes a side until browned. Set aside on a plate.
3. In the remaining oil, cook the onion for 3 minutes, then add the peppers and mushrooms and cook 5 minutes until the mushrooms release their water and it evaporates.
4. Add the garlic and tomato paste and stir for a minute until fragrant.
5. Return the chicken to the pan with the tomatoes and thyme. Cook over medium heat, lid slightly ajar, for 8–10 minutes until the chicken is cooked through and the sauce thickens.
6. Taste and adjust the salt. Serve hot with rice or bread.

## Frequently asked questions

### Why does chicken sauté turn out dry?

Usually the chicken was overcooked, or the crowded pan steamed it instead of searing it. Sear the 2–3 cm cubes in batches, then simmer them in the sauce for no more than 8–10 minutes.

### How do I stop the mushrooms making it watery?

Mushrooms release water as they heat. Don't crowd the pan, and cook them with the peppers until their liquid has evaporated; wiping them with a damp cloth instead of soaking them helps, too.

### Can I make tavuk sote with chicken thighs?

Yes. Boneless, skinless thighs stay juicier and forgive overcooking, so allow a few minutes longer. Whichever cut you use, there should be no pink left in the middle of a piece.

### Can I change the list?

Of course. The ready-made list is just a starting point: delete, add, move items between categories.

### Do I need an account?

No. A room code is all it takes — no email, password or signup.

### How long is the list kept?

As long as you use it. A list is only deleted after a month without any activity; even opening the room resets the clock.

### Can I install it on my phone?

Yes. With the room open, tap "Save Room" to add it to your home screen and open it with one tap.
