Menemen (Turkish scrambled eggs with tomatoes) — ingredients and method

A legend of the Turkish breakfast table: tomatoes, peppers and eggs, one pan, 20 minutes. Copy the ingredients to your room, tick off what's missing at the shop, and keep the steps open on your phone.

Serves 4 · 20 min

In short

Menemen for 4 takes 4 eggs, 4 medium tomatoes, 3 long green peppers, 1 small onion and 2 tablespoons of butter, all in one pan in about 20 minutes. Soften the onion and peppers in butter, cook the tomatoes down to a thick sauce, then crack in the eggs. Take the pan off the heat while the eggs are still a little runny for a creamy texture.

Ingredients

  • Eggs4
  • Tomatoes4 medium
  • Long green peppers3
  • Onion1 small
  • Butter2 tbsp
  • Salt½ tsp
  • Black pepper½ tsp
  • Chili flakes1 tsp
  • Breadto serve

Method

  1. Finely chop the onion and slice the peppers into thin rings. Dice the tomatoes; peel them first if you like.

  2. Melt the butter in a wide pan over medium heat; cook the onion for 3 minutes, then the peppers for 4–5 minutes until soft.

  3. Add the tomatoes and salt; cook uncovered for 8–10 minutes until the juices reduce to a thick sauce.

  4. Lower the heat and crack the eggs over the sauce. When the whites begin to set, stir gently with a wooden spoon.

  5. Sprinkle with black pepper and chili flakes. Take the pan off the heat while the eggs are still a little runny; they finish cooking in the residual heat.

  6. Serve hot straight from the pan with plenty of bread.

Frequently asked questions

Should menemen have onion or not?

It's a never-ending Turkish debate, and both versions are made. This recipe includes a small onion for a sweet depth; to skip it, cook the peppers and tomatoes the same way and the butter still carries plenty of flavour.

Why is my menemen watery?

The tomatoes haven't cooked down enough. Simmer them uncovered for 8–10 minutes until they form a thick sauce before adding the eggs, and don't over-stir once the eggs go in.

Do I need to peel the tomatoes for menemen?

It's optional: the skins can curl into thin strips in the sauce. To peel them, dip the tomatoes in boiling water for a minute, then into cold water, and the skins slip right off.

Can I change the list?

Of course. The ready-made list is just a starting point: delete, add, move items between categories.

Do I need an account?

No. A room code is all it takes — no email, password or signup.

How long is the list kept?

As long as you use it. A list is only deleted after a month without any activity; even opening the room resets the clock.

Can I install it on my phone?

Yes. With the room open, tap "Save Room" to add it to your home screen and open it with one tap.
