Ingredients
- Grape leavesabout 40
- Short-grain rice1 cup
- Onions3 medium
- Olive oil½ cup
- Pine nuts2 tbsp
- Currants1 tbsp
- Tomato paste1 tbsp
- Dill½ bunch
- Parsley½ bunch
- Dried mint1 tsp
- Allspice½ tsp
- Sugar1 tsp
- Salt1½ tsp
- Black pepper½ tsp
- Water2½ cups, hot
- Lemon1, for juice and serving
Method
Soak brined leaves in hot water for 2–3 minutes, rinse under cold water and drain to remove the excess salt. If using fresh leaves, blanch them in boiling water for 1 minute. Snip off the stem ends.
Finely chop the onions. In a wide pan, soften them in half of the olive oil for 8–10 minutes, then add the pine nuts and let them colour lightly.
Add the washed, drained rice and stir for 3–4 minutes. Add the tomato paste, currants, 1 cup of hot water, salt, pepper, allspice and sugar, then cook covered for 10 minutes until the liquid is absorbed.
Take off the heat and fold in the finely chopped dill, parsley and mint; cool until just warm, as hot filling softens the leaves and makes rolling harder.
Lay a leaf vein side up with the stem end towards you; put half a teaspoon of filling at the stem end, fold in the sides and roll up firmly but not too tight, like a thin cigar, as the rice will swell.
Line the bottom of a pot with leftover leaves and pack the rolls in snugly, seam side down. Set an upturned plate on top, then add the remaining olive oil, the lemon juice and 1½ cups of hot water.
Cover and simmer on low for 40–45 minutes. Leave in the pot for 30 minutes, then cool to room temperature, chill in the fridge and serve with lemon wedges.

Frequently asked questions
How do I prepare brined grape leaves before rolling?
Soak them in hot water for 2–3 minutes, then rinse under cold water and drain; this removes excess salt and softens the leaves. Cut off the stems, and use torn or small leaves to line the bottom of the pot.
Why are my stuffed grape leaves tough or the rice undercooked?
Rolling too tightly is the usual cause, as the rice swells and has no room. Also weigh the rolls down with an upturned plate, cook them on low heat with enough hot water, and wash and half-cook the rice before filling.
How long do stuffed grape leaves keep, and can I freeze them?
They keep 3–4 days in a covered container in the fridge; don't leave them out for more than 2 hours. Since they're served cold, you can freeze portions for 2–3 months and just thaw them in the fridge.
Can I change the list?
Of course. The ready-made list is just a starting point: delete, add, move items between categories.
Do I need an account?
No. A room code is all it takes — no email, password or signup.
How long is the list kept?
As long as you use it. A list is only deleted after a month without any activity; even opening the room resets the clock.
Can I install it on my phone?
Yes. With the room open, tap "Save Room" to add it to your home screen and open it with one tap.
