Sütlaç (Turkish baked rice pudding) — ingredients and method

A restaurant-window favourite that's surprisingly easy at home: milk, rice and sugar simply need patience to thicken. Copy the ingredients to your room, tick off what's missing at the shop, and keep the steps on your phone.

Serves 6 · 50 min + cooling

In short

Turkish baked rice pudding for 6 needs 1 litre of whole milk, ½ cup of short-grain rice, 1 cup of water, ¾ cup of sugar, 2 tablespoons of cornstarch and vanilla; it takes about 50 minutes plus cooling. Cook the rice in water, simmer it in the milk until thick, divide into ovenproof bowls, grill at 220 °C for 3–5 minutes and chill for at least 3 hours.

Ingredients

  • Whole milk4 cups
  • Short-grain rice½ cup
  • Water1 cup
  • Granulated sugar¾ cup
  • Cornstarch2 tbsp
  • Vanilla extract1 tsp
  • Salt1 pinch
  • Cinnamonto serve
  • Pistachiosto serve

Method

  1. Rinse the rice and drain. Simmer in a small pot with 1 cup of water for 10–12 minutes until the water is absorbed.

  2. Add the milk and bring to the boil, stirring. Simmer on low heat for 15 minutes, stirring now and then.

  3. Add the sugar, salt and vanilla. Dissolve the cornstarch in ½ cup of cold milk (or water), pour in slowly and cook for 3–4 minutes, stirring constantly, until thick.

  4. Take off the heat and divide between ovenproof bowls. Heat the oven grill to 220 °C (425 °F).

  5. Place the bowls on the top rack and grill for 3–5 minutes until the surface is flecked with brown; don't take your eyes off them.

  6. Cool to room temperature, then chill for at least 3 hours. Sprinkle with cinnamon and chopped pistachios before serving.

Frequently asked questions

Why is my sütlaç runny?

Most often the cornstarch hasn't cooked long enough. Once it's in, stir constantly for 3–4 minutes until the pudding thickens; it also firms up as it cools and chills, so it's normal for it to look slightly loose when hot.

Can I make sütlaç without an oven?

Yes. Skip the grilling, divide the pudding into bowls and chill it for the stovetop version, topped with cinnamon and pistachios. You need the grill only for the classic speckled, caramelised top.

How long does sütlaç keep?

Covered in the fridge it keeps 2–3 days. Let it cool to room temperature first, but don't leave it out for more than about 2 hours.

Can I change the list?

Of course. The ready-made list is just a starting point: delete, add, move items between categories.

Do I need an account?

No. A room code is all it takes — no email, password or signup.

How long is the list kept?

As long as you use it. A list is only deleted after a month without any activity; even opening the room resets the clock.

Can I install it on my phone?

Yes. With the room open, tap "Save Room" to add it to your home screen and open it with one tap.
